The Asado Experience
Spend the day immersed in the rich traditions of Argentinian fire cooking with renowned pitmaster Matias Casotto @banquet1415 here in Birstall. In this exclusive live fire masterclass, Matias will guide you through the techniques, rituals, and flavours of a true Asado — Argentina’s iconic social feast. Cooking over Kadai firebowls, Flamery charcoal grills, and OFYR wood-fired ovens, you’ll learn how to harness the raw power of fire to create bold, deeply flavoured dishes the Argentinian way.

Whether you’re a seasoned BBQ enthusiast or just starting your fire-cooking journey, this is your chance to cook, learn, and eat with one of the best in the game.

- Vacio (flank steak) – cooked low and slow over embers for unbeatable tenderness
- Picanha – seared to perfection with crispy fat caps and juicy centres
- Beef short ribs – fire-roasted until fall-off-the-bone tender
- Pork rose (matambrito) – thin, marbled pork belly grilled until golden and juicy
- Chorizo – smoky, spiced, and sizzling straight from the grill
- Pork collar (bondiola) – deeply marbled, slow-cooked for melt-in-the-mouth richness
- Stuffed BBQ peppers – smoky, charred, and filled with seasonal veg and cheese
- Provoleta – molten provolone cheese grilled until bubbling, served with chimichurri
- Fire-roasted potatoes – cooked in the coals with herbs and rich olive oil
- Chimichurri & Salsa Criolla – vibrant, tangy, and essential asado condiments
- Dessert: Argentine pancakes with dulce de leche – sweet, gooey, and irresistibly indulgent
🍷 To drink: Argentinian merlot, hand-picked to pair perfectly with the smoky, bold flavours from the fire.
Throughout the day, you’ll learn the art of fire management, meat preparation, carving techniques, and the cultural significance behind each element of an asado. Then we’ll gather together to enjoy a shared feast — just as it’s done in Argentina.
Basecamp FAQ’s :
- How many per class? 16 Spaces available for the Asado Experience
- What should I wear? British weather will bring us glorious sunshine with a sprinkling of rain and a gush of wind – it’s unpredictable. Best to be prepared as our cook school will be hosted outdoors, however it is sheltered and heated. We do recommend NO flip flops/sandals please, no one wants to lose a toe dropping a knife!
- What should I bring? Just your wonderful selves, and a tub if you want to take home any leftovers, we will provide all of the equipment needed.
- What if I have an allergy? Please get in touch before booking, as we cannot guarantee suitability. If you have a serious allergy, we advise you not to attend. This is because we simply cannot guarantee that ingredients have not come into contact with that allergen from harvesting, through production, packaging or transport.
- When should I arrive, and where do I park? Please arrive around 9:45am on the day of your class so we can get you a coffee, breakfast and settled in. If you’re driving, then please where possible park in the free carpark accross the road as we don’t have many spaces on site.
